TOFURKY ROAST WITH APRICOT GLAZE
Serves 4-8

INGREDIENTS:

1 Tablespoon apricot jam
1 Tablespoon sesame oil
2 Tablespoons water
3 Tablespoons soy sauce
1 Tofurky roast
1 onion, quartered
3 carrots, peeled, large chunks
3 stalks celery, large chunks

INSTRUCTIONS:

1. Mix jam, sesame oil, water, soy sauce
2. Heat oven to 350F
3. Put Tofurkey in a small pan, surround with veggies
4. Pour on 1/2 of the glaze, cover and bake (1 hour 15 minutes)
5. Add remaining glaze, bake (10 minutes)

Notes:
- The veggies are for flavoring only. They get too salty to serve unless you reduce the amount of soy sauce.
- Leftovers make decent Tofurky Reubens
