From Chloe's Kitchen Volume 1 (revised)

RED BEANS
(Serves 2)

INGREDIENTS:

1/2 onion
2 Tablespoons olive oil
1 stalk celery
2 garlic cloves minced
1/2 teaspoons Sylvia's Secret Seasoning, or mixed herbs such as thyme, basil, rosemary, oregano
1 small tomato, chopped or 2 Tablespoons tomato paste
2 cups freshly cooked or 1 can red beans
Salt to taste

INSTRUCTIONS:

1. In a small pot, saute onion, celery in olive oil until soft (5-10 min)
2. Add garlic, stir and cook for about 30 seconds
3. Add tomato paste, seasoning
4. Cook until tomato is soft and incorporated (5-10 min)
5. Add beans and simmer (5-30 min)
6. Salt to taste

Notes:
Serve with rice and side of vegetables like kale, collared greens or green beans.
