JESSE'S TEXAS VEGGIE CHILI
Serves 4-8

INGREDIENTS:

1/4 cup oil
1 small onion, chopped
1-3 bell peppers (any color), chopped
4 cloves garlic, chopped
(1) 28 oz can tomatoes OR (2) 4 oz cans tomato paste and extra water to thin
3 Tablespoons chili powder
1 Tablespoon cumin
1 teaspoon salt
1/4 teaspoon black pepper
1 can or 2 cups fresh red beans
1 can or 2 cups fresh black beans
1 can or 2 cups fresh pinto beans
1 bag Morningstar crumbles
1 can refried beans
hot sauce (optional)

INSTRUCTIONS:

1. Saute onion, peppers in oil for several minutes
2. Add garlic, saute for 1 minute
4. Add all spices then quickly add tomatoes or paste (and extra water, maybe a cup)
5. Simmer 15-20 minutes for tomato chunks, 5 minutes for paste
6. Add beans, return to a simmer for 20 minutes, stirring often as it thickens
7. Add crumbles, refried beans
8. Taste test for salt and spice level. If desired, stir in up to 1 t Tabasco or other favorite sauce to spice it up

Notes:
- This is really good with grilled cheese sandwiches or served in a bread bowl.
- This freezes well. Make extra for an easy meal later.
